Warm-up your lunchtimes with this one-pan Sweet Potato hash!

If you follow my stories on social media, you’ll probably be bored of seeing this lunch! But, it’s been such a revelation to me I just have to keep sharing it! This packs an absolute punch nutrition wise, and I’m not ashamed to say, I pretty much have it every day! It takes less than 10 mins without prep & tastes divine! With around 5-7 plant portions, plus the protein of the eggs, this is an absolute winner as the perfect ‘rainbow’ lunch. Here goes…

  • One Sweet Potato (I put mine in the microwave for 7/8 mins then slice into chunks)
  • 1/4 onion & half a pepper chopped – soften in chilli-infused oil whilst the sweet potato cooks
  • Add sweet potato & add some olive oil, coat, flip & stir – at this point I sometimes add some chopped cooked beetroot. Season.
  • Create space in the centre and crack in two eggs.
  • When the eggs are almost done, add a couple of handfuls of spinach to wilt
  • Tip all ingredients into a bowl, top with the eggs then sprinkle seeds on top (I use the 3 seed mix from Tesco which includes pumpkin, flax and sunflower).
  • Voila!
