Add sauteed kale to your meals this month

I’m a huge fan of kale at any time of the year if I’m honest as it’s so nutritious and versatile, but during this transitional time of year, it’s a great one to add to your shopping basket. I love to sauté kale with garlic and lemon and it makes a great side dish for lunch or dinner – and given it’s ready in less than 5 minutes, it’s an absolute all round winner for me.

I like to keep things really simple in the kitchen and it doesn’t get much easier than simply heating up some olive oil in the pan, adding in a clove or two of chopped garlic, seasoning then literally bunging in some chopped kale until it wilts. Season again and drizzle over some lemon juice – delicious! I often add it to a grain bowl, have it as a side with fish, or add it into my sweet potato hash as an alternative to spinach.
